Not a salad person. Not at all. But this one which doesn’t have a name is my new seasonal favorite. However, I called it Autumn Salad because I needed a title for this article and because today I’m not creative at all. But if you have any sugestions feel free to let me know in the comments below.
My mom sent me this recipe last week, it was a facebook post in romanian without credits so… here I am, kinda stealing it because it’s worth to be shared. 🙈
- 500 gr of fresh brussels sprouts
- 4 big sweet potatoes
- 1 pomegranate
- 1 lime
- Nuts (I used almonds because it was all I had. Since the birdies moved in I always have some almonds at home. It’s the only way to put them back in their cage when they go crazy and refuse to otherwise. 🙈 But next time I would like to try it with walnuts. I think it would be a better choice.)
- 1-2 tablespoons of honey
- 4-5 tablespoons of olive oil
- Chili powder
Wash and peel the sweet potatoes. Chop them in to small cubes. Wash the Brussels sprouts then cut them in half. Mix the sweet potato and the Brussels sprouts together, add some salt and oil, then put them in the oven for 20-30 minutes. Bake them until they are soft and your home smells like heaven.
Meanwhile roast the nuts in a pan, then wash and clean the pomegranate. Take your time. This is the best part. I love pomegranates. I love the touch, the smell, the taste, its crunchy texture. All of it. I also love cleaning it. 🙈 I love when I have to “work” for my food. Idk, it just calmes my mind.
When you’re done, mix everything together and add the honey, the lime juice and some chili over it. We love it sweet and spicy, don’t we?
