If someone were to ask me how my childhood tasted like, I would say like 10 different tastes because I’m a gemini and I couldn’t decide. If someone were to ask me what my favorite dish is I would probably say 10 different dishes, and I would totally mean it.
My childhood tastes like bean soup. Bean soup is my favorite food. Bean soup is something very special, even tough you will probably hear me say that my childhood tastes like “…” or ” … is my favorite food” about like 2836382 other recipes. 🤷🏼♀️
When I stopped eating meat I was terribly sad. I knew it’s the right thing to do and it felt really good, but still. I was sad. I was sad, because I tought I will not be able to eat fish roe salad, or meatballs with tomato sauce and mashed potatoes, or filled cabbage, or húsleves, or bean soup never again. There are some traditional dishes here in Transylvania I grew up with, and I couldn’t imagine my life without (most of them with meat, of course… 🙄). So lots of my recipes are using alternative meat. Since I cook I try to recreate the taste of the food I remember from my childhood. I guess this is pretty much what we are all doing one way or another. The only difference is maybe that I’m doing it, without using the main ingredients from the recipes. 😅
So here’s how I make traditional bean soup with smoked spare ribs WITHOUT smoked spare ribs. 😅
- 2-3 carrots
- 1 big onion
- 1 bay leaf
- 1 tablespoon of oil
- Kidney beans (sometimes I use canned beans because I need to prepare it quickly, because of Hungry Anna. I know it’s not the healthiest nor the cheapest, but if you met me in my hungry version you would know, canned food can save lifes 😅).
- 1 teaspoon of smoked paprika powder
- 1 tablespon of flour
- 4 tablespoons of sour cream of your choice (works perfect with all the vegan options I’ve tried as well)
- 1 vegetable cube
- Salt & pepper
Cook your beans of you’re not too lazy or hungry or open 2 large sized canned beans. Put the oil in a large cooking pot and heat it. Add the carrot slices and cook them for a couple of seconds. Put the beans over it. Add 1 l of water, the whole onion (you don’t need to chop it this time, yeeey!), the vegetable cube and the bay leaf and some salt. Cover it, and cook it on low fire until the carrots are soft. In a separate bowl mix the flour with the sour cream and add some hot liquid form the pot and blend it together to form a single smooth substance. Add it to the pot, and add the smoked pepper powder as well. Boil it. Taste it, and if necessary add some more salt and some pepper.
Serve it in a traditional bowl, I swear it tastes better in this. 😅 With red onion slices, sour cream and fresh white bread.
