I’m a gemini and I have an evil twin. Her name is Hungry Anna and God she’s MEAN. There’s is literally nothing I love more then eating. I eat a lot because I have to. I need food not just to survive, but also to keep Hungry Anna out of my life. This is why I collected lots of super easy and quick recipes to make sure I can stop her when I feel she is coming.
This vegan fish roe salad saved the world millions of times, it’s delicious and you only need a few ingredients and a few minutes to prepare it.
- 1 Lemon
- 1 tablespoon of Chia Seeds
- Vegan Mayo (I always keep a bottle of mayonnaise in my fridge for emergencies)
- 1 teaspoon of Linseed Oil (this will give it the fishy taste so make sure you don’t miss it or use something else instead)
- 1 small Red Onion
- 1-2 cloves of Garlic
Slice the onion and squeeze some lemon juice over it. This way it won’t hurt anymore.
Put 1 tablespoon of chia seeds in a bowl, and cover it with 4 tablespoons of cold water and mix it.
Prepare the mayonnaise.
Add 3-4 tablespoons of mayonnaise to the chia seeds after they absorbed the water and became a jelly. Add 1 teaspoon of linseed oil, press the garlic into it, add the onion slices and more lemon juice. Mix. Slice some cucumber or serve it with pickles or cherry tomatoes or whatever else you like to eat the fish roe salad with. It’s perfect with fresh bread or toast as well.
P.S. This salad is not only for emergencies, it is perfect for so many other occasions as well. We served it after our civil ceremony, but I make it often when friends or family come over for dinner.
